Vegetable Dehydration

We at Feeding Antigua, Inc purchase locally grown produce and prepare a variety of vegetables like carrots, potatoes, peas, guicoyitos, squash, yucca root, onions, mushrooms and dry them for several hours in our own commercial dehydrator. The dried product is then individually bagged and distributed to these families with each bag of dehydrated vegetables providing 3-4 nutrient rich meals for the average family. About 100 pounds of dehydrated vegetables are produced each month serving 90-100 families.

The dehydrated vegetables will maintain their nutritional value for several months if stored in a cool and dry place. Our goal is to double this amount of dried food and expand the areas we are currently serving.
